I'm trying to create something worthwhile...
This will be an RP based on all of the myths and legends of the world.
I'm not certain whether to set it in the 21st or the 15th centuries.
My idea is that this RP is only limited by the user's imaginations - but still has to be grounded somewhere in mythology. Say someone wanted to create a witch, but wanted the witch to be a cute teen girl like Marisa from Touhou Project - or wanted the witch to be all pretty and aristocratic like the witches from Umineko no Naku Koro ni - then that wouldn't be allowed 'cos witches in real mythology weren't like those examples at all.
...It's difficult to explain what I'm trying to get across, especially when I'm not really paying any attention to what I'm typing.

On the basis of what mythology you intend to use, you can make a different roleplay.
Irish-pagan mythology should probably revolve around something akin to Cu Chulainn or Diarmuid. Perhaps the Shadow Lands of Scathach? Or Gae Bolg? That is imaginative.
Also, on the context of it, you should probably rough draft the ideas you have first. It would be easier that way.
If you can form ideas around the basis and have people add ideas that could better the foundation as an example, then that would create something worth while.
Mythology is deep, and as a result you have quite the road ahead of you. Don't worry about it, though. It shouldn't be too difficult if you find the right people to help you.

My intention was to mix-up different mythologies of the world.
For example: my three characters would've been an Irish Witch, Japanese Inari Shrine Priestess and a Tengu (Japanese half-bird-half-human mythological creature - he serves as the witch's familiar).
However, I've all but given up on the idea because the site's gone too quiet.

I see. That is too bad, as I've realized this as well. A person leaves and everything stagnates, a weak social structure.
